You know how Australia basically made smashed avo famous? They were onto something. I mean, yes, the whole brunch-culture thing got a little ridiculous, but strip away the sourdough toast and the overpriced cafe setting and you have an absolute winner of a real-food breakfast concept. Good fat, good protein, vegetables that actually mean something. That is exactly what this bowl is. I took everything I love about that Aussie-style breakfast energy and built it into something that works for how I actually eat. Sweet potato rounds instead of toast. A properly caramelized edge on those rounds because we are not doing sad, pale sweet potatoes here. Crispy bacon, blistered cherry tomatoes, wilted spinach with garlic, and the most important part: a generous, chunky smashed avocado with lemon and a little heat. Then a fried egg right on top because of course. This bowl is filling in the best way. The kind of filling that keeps you steady for hours, not the kind that makes you crash by 10 a.m. No grains, no junk, just real food doing its job. God gave us some incredible ingredients to work with. This bowl is a pretty good reminder of that.

## Nutritional Benefits

### Sweet Potato: Slow-Burning Carbs That Actually Fuel You

- Rich in beta-carotene, which your body converts to vitamin A for immune and eye health.
- Provides steady, complex carbohydrates with a lower glycemic impact than refined grains, meaning no blood sugar spike and crash.
- A solid source of potassium and manganese, both important for muscle function and bone health.

### Avocado: The Real MVP of Healthy Fat

- Loaded with oleic acid, the same heart-healthy monounsaturated fat found in olive oil.
- High in fiber, which supports gut health and helps you stay full longer.
- Delivers folate, vitamin K, and potassium in amounts most people are genuinely deficient in.

### Pasture-Raised Eggs and Bacon: Quality Protein That Does More

- Pasture-raised eggs have a measurably better omega-3 to omega-6 ratio compared to conventional eggs.
- Eggs provide all nine essential amino acids and are one of the most bioavailable protein sources on the planet.
- Quality bacon from pasture-raised pigs contains B vitamins, selenium, and zinc. The source matters.

### Spinach and Cherry Tomatoes: The Antioxidant Layer

- Spinach is high in magnesium, iron, and vitamin K, nutrients that support energy production and blood health.
- Lightly wilting spinach actually increases the bioavailability of certain nutrients like beta-carotene.
- Cherry tomatoes deliver lycopene, a powerful antioxidant linked to reduced inflammation, and vitamin C to boot.

## FAQs

### Can I meal prep parts of this bowl ahead of time?

Absolutely. Roast the sweet potato rounds ahead and store them in the fridge for up to 4 days. Cook the bacon and keep it in an airtight container. When you are ready to eat, reheat those two components in a skillet while you do the spinach and tomatoes fresh, then fry your egg and smash your avo right before serving. The avo and egg are always best fresh.

### What if I do not eat pork? Can I swap the bacon?

Yes. Turkey bacon works well here, just watch the label and make sure there are no added sugars or fillers. You could also use thin slices of beef prosciutto or even a couple of chicken breakfast sausage patties. The goal is a salty, savory protein element to balance the richness of the avocado.

### Is this bowl Whole30 compliant?

It is, as long as your bacon is Whole30 compliant, meaning no added sugar in the cure. Check the label. Most store-bought bacon has sugar in the ingredients, so look for a sugar-free version or a brand that specifically labels it Whole30 approved.

### My avocados are not ripe yet. Can I still make this?

You really do need ripe avocados for a proper smash. If yours are firm, pop them in a paper bag with a banana or apple and leave them at room temperature overnight. The ethylene gas speeds up ripening. Do not refrigerate unripe avocados, it basically stops the ripening process in its tracks.

### Can I use a different base instead of sweet potato?

Totally. Roasted butternut squash rounds, thick slices of roasted beets, or even a bed of cauliflower rice all work beautifully here. If you are lower carb or keto, skip the sweet potato entirely and just build the bowl on the spinach and tomato base. Still incredible.

## Aussie-Inspired Paleo Breakfast Bowl with Smashed Avo, Bacon, and Fried Eggs

A hearty, whole-food breakfast bowl loaded with smashed avocado, crispy bacon, fried eggs, roasted cherry tomatoes, and wilted spinach on a base of caramelized sweet potato rounds. Bold, nourishing, and completely paleo.

- Prep time: 15 min
- Cook time: 25 min
- Total time: 40 min
- Servings: 2 servings

### Ingredients

- 1 medium sweet potato, peeled and sliced into 1/2-inch rounds
- 1 tablespoon avocado oil, divided
- Fine sea salt and black pepper, to taste
- 4 strips pasture-raised bacon
- 1 cup cherry tomatoes, halved
- 2 large handfuls baby spinach (about 2 cups loosely packed)
- 2 cloves garlic, minced
- 2 large pasture-raised eggs
- 2 ripe Hass avocados
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh flat-leaf parsley, roughly chopped
- Flaky sea salt, for finishing

### Instructions

1. Preheat your oven to 425°F. Line a large baking sheet with parchment paper. Arrange the sweet potato rounds in a single layer, brush both sides with about half the avocado oil, and season well with sea salt and black pepper. Roast for 20 to 22 minutes, flipping once at the halfway point, until the rounds are golden and just caramelized at the edges. Set aside.
2. While the sweet potatoes roast, lay the bacon strips in a cold skillet over medium heat. Cook, turning occasionally, until crispy, about 8 to 10 minutes. Transfer to a paper towel-lined plate. Reserve about 1 teaspoon of the bacon drippings in the pan.
3. Add the cherry tomatoes to the same skillet over medium-high heat. Season with salt and pepper and cook, stirring occasionally, for 3 to 4 minutes until they begin to blister and burst. Push the tomatoes to one side of the pan, drop the heat to medium, and add the minced garlic. Cook for 30 seconds until fragrant, then fold in the baby spinach. Toss everything together until the spinach is just wilted, about 1 to 2 minutes. Remove from heat.
4. In a separate small nonstick skillet, heat the remaining avocado oil over medium heat. Crack the eggs in one at a time and fry to your preferred doneness. For a runny yolk, cook 2 to 3 minutes undisturbed. Season with a pinch of salt.
5. Make the smashed avocado: halve and pit the avocados and scoop the flesh into a bowl. Add the lemon juice, red pepper flakes, and a generous pinch of sea salt. Smash with a fork to a rough, chunky consistency. Taste and adjust seasoning.
6. Assemble the bowls: divide the sweet potato rounds between two wide, shallow bowls. Spoon a generous mound of smashed avocado alongside. Pile on the wilted spinach and blistered tomatoes. Lay two bacon strips over each bowl, then crown each with a fried egg. Scatter the fresh parsley over everything and finish with a pinch of flaky sea salt. Serve immediately.
