Some side dishes look like they took effort and actually did. These are not those. I threw these together one night when I needed something that could hold its own next to a really good piece of beef, and honestly they kind of stole the show. Crispy bacon, tender-but-snappy asparagus, a bright little garlic and lemon herb situation on top. That's it. No complicated steps, no weird ingredients, nothing you have to hunt down at a specialty store. I love a side dish that respects the protein but doesn't disappear into the background. These do exactly that. And if you're someone who still needs to convince a spouse or a kid that vegetables are worth eating, wrap anything in bacon. That's all I'm going to say.

## Nutritional Benefits

### Asparagus: A Quiet Overachiever

- Asparagus is a solid source of folate, vitamin K, and vitamin C, three nutrients that a lot of people are quietly deficient in.
- It contains inulin, a prebiotic fiber that feeds beneficial gut bacteria. Your microbiome will thank you.
- It's naturally anti-inflammatory and has been studied for its role in supporting kidney and liver function. Real food doing real work.

### Pastured Bacon: Yes, It Belongs Here

- Quality pastured pork is a legitimate source of B vitamins, zinc, and selenium. The fat profile on pastured pork is meaningfully better than conventional.
- The saturated fat in bacon from a well-raised animal is not the villain you were told it was. Decades of research have walked that back. Your body knows what to do with real animal fat.
- Choose bacon with no added nitrates, no sugar in the cure, and ideally from a local farm or a brand you trust. That part matters.

### Garlic and Fresh Herbs: Small but Mighty

- Raw garlic contains allicin, one of the most well-documented natural antimicrobial and anti-inflammatory compounds in food.
- Fresh parsley is surprisingly high in vitamin C and vitamin A. It's not just a garnish.
- Lemon juice adds brightness and a small but real dose of vitamin C, and it helps your body absorb the plant-based iron in the asparagus more efficiently.

## FAQs

### Can I make these ahead of time?

You can assemble the bundles a few hours ahead and keep them covered in the fridge until you're ready to roast. I wouldn't roast them ahead of time because the bacon will lose its crispness as it sits. These are at their best straight out of the oven.

### What if my asparagus spears are really thin?

Thin asparagus will cook faster and can get a little floppy under the bacon before it crisps up. If that's what you have, reduce your roast time to about 13 to 15 minutes and keep an eye on them. Alternatively, bundle 5 or 6 thin spears together instead of 4 to give the bundle more structure.

### Is this Whole30 compliant?

It can be. Just make sure your bacon has no added sugar in the cure, which is the thing that usually knocks bacon out of Whole30 territory. Read your labels. The rest of the ingredients are fully compliant.

### What proteins does this pair well with?

Honestly, almost anything. Filet mignon, ribeye, grilled chicken thighs, seared salmon. The garlic herb drizzle is bright enough to complement a rich protein without competing with it. This is one of those sides that earns its place on the plate.

### Can I cook these on a grill instead of the oven?

Yes, and it's a great option. Grill over medium-high heat with the lid closed for about 12 to 15 minutes, turning once halfway through. You'll get a nice smoky char on the bacon. Just watch for flare-ups from the dripping fat.

If you make these, I genuinely want to know how it went. Drop a comment below, especially if you tried them on the grill or swapped in a different herb. And if you're building out a full paleo dinner, check out some of my other sides and mains. Real food, real simple, no nonsense.
