Real talk: mornings are hard. I know you know. And nothing makes a hard morning harder than staring into the fridge at 7am trying to figure out what you can actually eat that won't wreck everything you've been working toward. That's exactly why I make a batch of these muffins every single week. They are sitting right there on the counter, ready to go, and they taste like a treat, but they are straight-up whole food. Ripe bananas doing all the heavy sweetening. Almond flour for a moist, sturdy crumb. Toasted walnuts for crunch and those good omega-3 fats. Warm cinnamon because it belongs in every muffin that ever existed. I genuinely believe God gave us ripe bananas so we'd have no excuse not to bake something good. These come together in about ten minutes, they bake in twenty, and your whole house smells incredible. That's a win.

## Nutritional Benefits

### Almond Flour: More Than Just a Grain-Free Swap

- Blanched almond flour is rich in vitamin E, magnesium, and manganese, nutrients most of us are chronically low in.
- It provides healthy monounsaturated fats that support stable blood sugar and keep you full far longer than a conventional wheat-flour muffin would.
- The protein content (about 6g per muffin) makes this a legit breakfast, not just a fancy snack.

### Bananas: Nature's Sweetener That Actually Does Something

- Very ripe bananas provide natural fructose along with potassium, vitamin B6, and prebiotic fiber that feeds your good gut bacteria.
- Using banana as the primary sweetener means we need far less added maple syrup, the total sugar stays low and it all comes from real sources.
- Banana also acts as a binder here, helping hold the muffins together without any gums or starches.

### Walnuts: The Brain-Boosting Crunch

- Walnuts are one of the best plant sources of ALA omega-3 fatty acids, which support brain health and help fight inflammation.
- They add a satisfying crunch that keeps you from feeling like you're eating diet food, because you're not.
- Walnuts also contribute additional protein and fiber, rounding out the macros of each muffin.

### Cinnamon and Apple Cider Vinegar: Small but Mighty

- Cinnamon has well-documented blood sugar balancing properties, which makes it an especially smart addition to any breakfast baked good.
- Apple cider vinegar reacts with the baking soda to give these muffins a beautiful rise without any grain-based leavening.
- Together, these two ingredients do quiet but important work that most people never think about.

## FAQs

### Can I make these muffins without eggs?

Eggs do a lot of structural work here alongside the banana, so swapping them out is tricky. That said, some people have success using flax eggs (1 tablespoon ground flax plus 3 tablespoons water per egg, rested for 5 minutes). The texture will be denser and more moist, but they will still taste great. I have not tested this personally, so just know results may vary.

### My muffins came out gummy in the middle. What happened?

A few things can cause this. Underbaking is the most common culprit, almond flour baked goods look done on the outside before the inside fully sets. Make sure your toothpick comes out completely clean, and if not, give them an extra 2 to 3 minutes. Also, make sure your bananas weren't too large. Excess moisture from an oversized banana can throw off the batter ratio.

### Can I use a different nut or seed instead of walnuts?

Absolutely. Pecans are my second favorite here and they give a slightly sweeter, buttery flavor. Roughly chopped almonds work great too. If you need a nut-free version, raw pumpkin seeds (pepitas) are a solid option and add a nice color contrast on top.

### Are these muffins Whole30 compliant?

Technically, Whole30 does not allow baked goods made with compliant ingredients that are recreating non-compliant treats, even if every individual ingredient passes. These muffins also contain maple syrup, which is not Whole30 approved. If you are in a strict Whole30 round, I would save these for after your 30 days. They will be worth the wait.

### How ripe do the bananas need to be?

The riper the better, seriously. You want bananas that are heavily speckled or even mostly brown. That's when they are the sweetest and mash the smoothest. If your bananas are just yellow with a little spotting, your muffins will be less sweet and the banana flavor will be more subtle. No wrong answer, just know what you're getting.

### Can I freeze these and reheat them?

Yes, and this is actually how I use them most often. Let them cool completely, then wrap each muffin individually in plastic wrap or parchment and freeze in a zip bag for up to 2 months. To reheat, just microwave from frozen for about 45 to 60 seconds or let thaw at room temperature for an hour or two. They hold up beautifully.

If you make a batch of these, I really want to hear how they turned out. Tag me on Instagram or drop a comment below and tell me what you think. Did you swap the walnuts? Add chocolate chips? Go rogue with some shredded coconut on top? I love hearing how you make these your own. And if this recipe helped your weekday mornings feel a little less chaotic, good. That's exactly what it's here for.

- Prep time: 10 min
- Cook time: 22 min
- Total time: 32 min
- Servings: 12 muffins

### Ingredients

- 2 cups blanched almond flour
- 2 tablespoons tapioca flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground nutmeg
- 3 large eggs, room temperature
- 2 very ripe medium bananas, mashed (about 3/4 cup)
- 3 tablespoons pure maple syrup
- 2 tablespoons melted coconut oil, plus more for greasing
- 1 teaspoon pure vanilla extract
- 1 teaspoon apple cider vinegar
- 3/4 cup raw walnuts, roughly chopped (divided)

### Instructions

1. Preheat your oven to 350°F (175°C). Grease a standard 12-cup muffin tin generously with coconut oil or line with parchment liners.
2. In a large bowl, whisk together the almond flour, tapioca flour, baking soda, cinnamon, sea salt, and nutmeg until no lumps remain.
3. In a separate medium bowl, whisk the eggs until lightly beaten. Add the mashed banana, maple syrup, melted coconut oil, vanilla extract, and apple cider vinegar. Whisk until smooth and well combined.
4. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined. Do not overmix. Fold in 1/2 cup of the chopped walnuts.
5. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Scatter the remaining 1/4 cup of chopped walnuts evenly over the tops of each muffin, pressing them in very lightly.
6. Bake for 20 to 22 minutes, until the tops are golden and a toothpick inserted into the center comes out clean or with just a dry crumb.
7. Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring to a wire rack. Let them cool at least 10 more minutes before eating, they firm up as they cool.
8. Store leftovers in an airtight container at room temperature for up to 2 days, in the refrigerator for up to 5 days, or freeze individually for up to 2 months.
