Frozen desserts deserve a hard look. The ones you grew up with, the ones in the cardboard cartons at the grocery store, most of them are a science project. Stabilizers, emulsifiers, skim milk powder, high-fructose corn syrup hiding behind a clean-looking label. And I used to eat that stuff without a second thought. Once I started paying attention to what I was actually putting in my body, I had to find a better way. Because I was not giving up a cold, creamy dessert. That was not happening. This coconut pomegranate frozen cream is what I landed on, and honestly, it is stunning. Not just for how it tastes, but for how simple it is. Two cans of full-fat coconut milk, some raw honey, real vanilla, and fresh pomegranate arils. That is the whole story. No ice cream maker sitting in a cabinet you have to drag out. No complicated custard base. You whip the cream, fold in the pomegranate, and freeze it. Done. The pomegranate is the thing that makes this feel special. Those little arils are like tiny jewels, and when you press some of them before folding them in, they bleed just enough color and tartness into the cream to create these gorgeous pale-pink swirls. It looks like something from a restaurant. It tastes even better than that. And every single ingredient in it was designed by God to actually nourish you, not just fill you up.

## Nutritional Benefits

### Full-Fat Coconut Milk

- Rich in medium-chain triglycerides (MCTs), particularly lauric acid, which the body converts to energy efficiently rather than storing as fat.
- Provides a creamy, satisfying fat source that supports hormone production and brain function.
- Dairy-free and naturally lactose-free, making it a solid option for anyone with dairy sensitivities or who is simply trying to eat cleaner.

### Pomegranate Arils

- Packed with punicalagins and anthocyanins, two potent antioxidant compounds that help fight oxidative stress and inflammation.
- A good source of vitamin C, vitamin K, folate, and potassium.
- Studies suggest pomegranate may support heart health and healthy blood pressure. Your body knows what to do with real fruit.

### Raw Honey

- Unlike refined sugar, raw honey retains trace enzymes, antioxidants, and small amounts of minerals like zinc and iron.
- Has a lower glycemic response than refined sugar when used in moderation, especially in a fat-rich base like coconut cream.
- A little goes a long way. Three tablespoons across six servings is a reasonable, intentional sweetener, not a sugar bomb.

## FAQs

### Do I need an ice cream maker for this recipe?

Nope, not at all. That is one of the best things about this one. The whipped coconut cream creates enough air and structure that it freezes into a scoopable, creamy texture without any churning. Just freeze it in a loaf pan and you are good.

### My coconut cream did not solidify in the can. What happened?

This happens sometimes with certain brands or if the can was shaken or stored somewhere warm. Make sure you are using full-fat coconut milk (not light, not coconut cream from a carton) and that it sat in the back of the fridge, not the door, for a full night. Brands like Native Forest or Thrive Market's coconut milk tend to solidify reliably.

### Can I use frozen pomegranate arils?

Yes, with a caveat. Thaw them first and pat them dry very well. Excess water from frozen arils will create ice crystals in your frozen cream. Fresh arils are really the move here when you can get them, but thawed and dried frozen ones will work in a pinch.

### How long does this keep in the freezer?

Up to two weeks in an airtight container with parchment pressed to the surface. After that it starts to get a little icy and lose its creaminess. It is best in the first five days, honestly. Not that it ever lasts that long in my house.

### Is this Whole30 compliant?

Not technically, because Whole30 does not allow any sweeteners including honey, and it also discourages recreating dessert foods. But it is a fantastic, clean, real-food dessert for anyone eating paleo or just trying to get away from processed sugar. If you are in a Whole30 round, bookmark this for when you are done.

### Can I add anything else to this?

Absolutely. A pinch of cardamom in the base is incredible with the pomegranate. Some finely chopped toasted pistachios folded in add a great crunch. A few cacao nibs work beautifully too. Keep it simple the first time so you can taste what it is supposed to be, then play from there.

If you make this, I really want to see it. Tag me on Instagram because the color of this thing in a bowl is something I will never get tired of looking at. And if you have a friend who thinks eating healthy means giving up dessert, send them this recipe. That is a myth we are putting to bed right now.

## Coconut Pomegranate Frozen Cream with Honey and Vanilla

A silky, scoopable paleo frozen cream made from full-fat coconut milk, raw honey, and pure vanilla, swirled with jewel-bright pomegranate. No ice cream maker needed, no dairy, no refined sugar. Just real ingredients doing beautiful things.

- Prep time: 20 min
- Cook time: PT0M
- Total time: 20 min
- Servings: 6 servings

### Ingredients

- 2 cans (13.5 oz each) full-fat coconut milk, refrigerated overnight
- 3 tablespoons raw honey (or pure maple syrup for a lighter flavor)
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon fine sea salt
- 3/4 cup fresh pomegranate arils, plus more for serving
- 1 tablespoon coconut cream (skimmed from the top of a refrigerated can)
- 1 teaspoon fresh lemon juice

### Instructions

1. Open your refrigerated cans of coconut milk and scoop the thick, solidified coconut cream into a large mixing bowl. Reserve the liquid for another use (smoothies love it). You want about 1.5 to 2 cups of thick cream total.
2. Using a hand mixer or stand mixer, beat the coconut cream on medium-high for 2 to 3 minutes until it is light and fluffy with soft peaks. It will look like slightly loose whipped cream. That is exactly what you want.
3. Add the raw honey, vanilla extract, sea salt, and lemon juice to the whipped coconut cream. Beat again on medium speed for another 30 seconds to combine everything evenly. Taste it. Adjust honey if you want it a touch sweeter.
4. Pour the pomegranate arils into a small bowl and very gently press about half of them with the back of a spoon to release a little juice. Leave the rest whole. Fold both the pressed and whole arils into the coconut cream mixture using a spatula. Go gently so you keep some of the cream light and airy.
5. Pour the mixture into a freezer-safe loaf pan or shallow container. Smooth the top with your spatula. Press a piece of parchment paper directly onto the surface to prevent ice crystals from forming.
6. Freeze for at least 5 hours, or overnight for the best scoopable texture. If you freeze it overnight, let it sit on the counter for 8 to 10 minutes before scooping.
7. Scoop into bowls and top with a generous handful of fresh pomegranate arils and a tiny drizzle of honey if you are feeling fancy. Serve immediately.
