The grill does something to a good piece of sirloin that no other cooking method can touch. That char, that sear, that slightly smoky crust around a juicy, pink center. Pair it with a herby chimichurri and cauliflower rice that actually has flavor instead of tasting like sadness in a bowl, and you've got a lunch that earns its spot in the rotation. This one came together because I wanted something that felt substantial and satisfying without putting me to sleep at my desk an hour later. No bread, no grains, no sluggish afternoon. Just real food that works.

## Nutritional Benefits

### Grass-Fed Beef and Protein

- Top sirloin is a lean, high-protein cut. A 3.5-ounce serving of beef provides roughly 26 grams of protein, according to the USDA FoodData Central database.
- Beef is one of the most bioavailable sources of heme iron, zinc, and B12, nutrients that support energy metabolism and red blood cell production (National Institutes of Health, Office of Dietary Supplements).
- Research published in the journal Nutrients (2015) suggests that higher protein intake at lunch may support satiety and reduce overall calorie intake later in the day.

### Cauliflower as a Grain-Free Base

- Cauliflower is a cruciferous vegetable that provides vitamin C, vitamin K, and folate with a fraction of the carbohydrates found in rice (USDA FoodData Central).
- One cup of raw cauliflower contains about 5 grams of carbohydrates and 2 grams of fiber, making it a strong low-carb swap for traditional grains.
- Cruciferous vegetables contain glucosinolates, compounds that research has linked to general health support, though dietary benefits vary by individual (National Cancer Institute).

### Fresh Herbs in Chimichurri

- Parsley is surprisingly rich in vitamin K. Just two tablespoons of fresh parsley provides more than 100% of the daily recommended intake of vitamin K (USDA FoodData Central).
- Fresh garlic contains allicin, a compound that research suggests may support cardiovascular health, according to a review published in the Journal of Nutrition (2016).
- Red wine vinegar adds a little tang without refined sugar, and some research suggests acetic acid in vinegars may support healthy blood glucose response after meals (Vinegar: Medicinal Uses and Antiglycemic Effect, Medscape General Medicine, 2006).

### Avocado Oil for Grilling

- Avocado oil has one of the highest smoke points of any cooking oil, around 500°F, making it a smart choice for high-heat grilling without oxidation concerns.
- It is rich in monounsaturated fatty acids, particularly oleic acid, which is linked to heart health in a substantial body of research including studies cited by the American Heart Association.
- Unlike many seed or vegetable oils, avocado oil is minimally processed and considered a whole-food fat source consistent with a paleo eating framework.

## FAQs

### Can I make this without a grill?

Absolutely. A cast iron grill pan on your stovetop over high heat works really well. Get it screaming hot before you add the skewers, and crack a window, it will smoke. You can also use a regular cast iron skillet and sear the beef cubes in batches. You won't get the same char, but the flavor is still fantastic.

### Is this recipe Whole30 compliant?

Yes, as written it is Whole30-friendly. Just double-check that your balsamic vinegar has no added sugar or sulfites if that matters to you, and use a compliant store-bought riced cauliflower if you go that route.

### Can I use a different cut of beef?

Top sirloin is my go-to here because it holds up on a skewer and doesn't dry out fast. Ribeye chunks are absolutely incredible if you want to go that direction. Flank steak works too but cut it a little larger or it can get tough on the grill. I'd skip anything very lean like eye of round for skewers.

### How long can I store the leftovers?

Store the beef and cauliflower rice in separate airtight containers in the fridge for up to 3 days. Keep the chimichurri in a small jar with a thin layer of avocado oil on top to preserve the color, it stays good for about 5 days. Reheat the cauliflower rice in a skillet and the beef gently in a pan so it doesn't overcook.

### Can I prep this ahead for meal prep?

Yes, and it's a great meal prep option. Marinate the beef the night before and keep it in the fridge. Make the chimichurri ahead and refrigerate it. Rice the cauliflower head and store it raw in a bag. Then on the day you want it, the only actual cooking is the cauliflower rice (about 8 minutes) and the skewers on the grill (about 8 minutes). Fast and already half done.

### I don't love cilantro. Can I leave it out of the chimichurri?

One hundred percent. Some people genuinely cannot tolerate cilantro and that's a real thing. Just swap it out for more flat-leaf parsley, or try fresh oregano for a slightly different but equally good herb profile. The chimichurri will still be bright and punchy without it.

Juicy sirloin cubes marinated in balsamic, garlic, and fresh herbs, grilled hard on skewers, then served over garlicky cauliflower rice loaded with bright, herby chimichurri. Real food, real flavor, and ready in under 40 minutes.

- Prep time: 20 min
- Cook time: 15 min
- Total time: 35 min
- Servings: 4 servings

### Ingredients

- 1.5 lbs top sirloin steak, cut into 1.5-inch cubes
- 3 tablespoons balsamic vinegar
- 2 tablespoons avocado oil, plus more for grill
- 3 cloves garlic, minced (divided)
- 1 teaspoon dried Italian seasoning
- 1 teaspoon fine sea salt (divided)
- 1/2 teaspoon black pepper (divided)
- 1/4 teaspoon red pepper flakes
- 1 large head cauliflower, riced (or 4 cups store-bought riced cauliflower)
- 1 tablespoon avocado oil (for cauliflower rice)
- 1/2 teaspoon garlic powder
- FOR THE CHIMICHURRI:
- 1 cup fresh flat-leaf parsley, tightly packed
- 1/4 cup fresh cilantro, tightly packed
- 3 tablespoons red wine vinegar
- 3 tablespoons avocado oil
- 2 cloves garlic
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon fine sea salt
- 2 tablespoons water (to thin as needed)

### Instructions

1. MARINATE THE BEEF: In a large bowl or zip-top bag, combine the balsamic vinegar, 2 tablespoons avocado oil, 2 cloves of the minced garlic, Italian seasoning, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and red pepper flakes. Add the sirloin cubes and toss well to coat. Let marinate at room temperature for at least 15 minutes, or refrigerate for up to 4 hours. If using wooden skewers, soak them in water for at least 15 minutes before grilling.
2. MAKE THE CHIMICHURRI: Add the parsley, cilantro, red wine vinegar, avocado oil, garlic cloves, red pepper flakes, and salt to a food processor or blender. Pulse until finely chopped but not completely pureed, you want some texture. Add water one tablespoon at a time to reach a spoonable consistency. Taste and adjust salt. Set aside.
3. COOK THE CAULIFLOWER RICE: Heat 1 tablespoon avocado oil in a large skillet over medium-high heat. Add the riced cauliflower, remaining minced garlic (1 clove), garlic powder, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper. Cook, stirring occasionally, for 6 to 8 minutes until the cauliflower is tender and just starting to get a little golden on the edges. Remove from heat and stir in 2 to 3 tablespoons of the chimichurri. Cover to keep warm.
4. GRILL THE SKEWERS: Preheat your grill or grill pan to high heat and brush the grates lightly with avocado oil. Thread the marinated beef cubes onto skewers, leaving a little space between each piece. Grill for 3 to 4 minutes per side (about 6 to 8 minutes total) for medium, or cook to your preferred doneness. Pull them off the heat and let rest for 3 to 5 minutes.
5. ASSEMBLE AND SERVE: Divide the chimichurri cauliflower rice between four bowls. Lay the beef skewers across the top. Spoon a generous amount of chimichurri sauce over everything. Serve immediately.
