My drive-through order used to be a Dutch Bros caramel macchiato cold brew, extra caramel, and I did not think twice about what was in it. Then I started paying attention to what refined sugar and conventional dairy were doing to my body, and suddenly that cup felt a lot less innocent. I spent a few weeks tinkering in my kitchen to recreate that same rich, cold, creamy, caramel-drizzled experience with nothing but real food, and honestly? This version slaps harder than the original. The date caramel is the hero here. It has this deep, almost butterscotch sweetness that no syrup pump has ever actually delivered. The coconut milk foam on top is cold and silky. And the cold brew underneath ties it all together. You will make this once and never pay six bucks for a gas-station sugar bomb again.

## Nutritional Benefits

### Medjool Dates

- Provide natural sugar alongside fiber, which slows the glucose spike compared to refined syrups.
- Rich in potassium, magnesium, and B vitamins that support energy and muscle function.
- Contain antioxidants including flavonoids and carotenoids that help fight cellular inflammation.

### Full-Fat Coconut Milk

- Delivers medium-chain triglycerides (MCTs) that your body burns for fuel rather than storing as fat.
- Naturally dairy-free and a great source of healthy saturated fat that supports hormone production.
- The thick coconut cream froths into a foam without any additives, gums, or stabilizers.

### Cold Brew Coffee

- Cold brewing produces a lower-acid coffee, which is gentler on the gut lining than hot-brewed coffee.
- Provides caffeine for sustained mental clarity and physical energy without the crash of sugary energy drinks.
- Rich in antioxidants that support liver health and reduce oxidative stress.

### Cinnamon and Sea Salt

- Cinnamon has been studied for its ability to improve insulin sensitivity and support healthy blood sugar regulation.
- A pinch of quality sea salt balances sweetness naturally, reducing the need for extra sweetener.
- Both add depth of flavor with zero calories and zero processing.

## FAQs

### Can I make the date caramel ahead of time?

Yes, and I actually recommend it. Blend a bigger batch and store it in a sealed jar in the fridge for up to two weeks. It thickens even more as it chills, so just let it sit at room temperature for a few minutes before scooping.

### Is this Whole30 compliant?

Technically Whole30 does not allow coffee drinks that recreate the experience of a treat or dessert beverage, even with compliant ingredients. The ingredients themselves are all Whole30 compliant, but whether this fits your Whole30 is a personal call. If you are in a strict round, save it for after.

### What if my coconut cream will not foam?

This usually means the can was not cold enough. Put your can of full-fat coconut milk in the fridge overnight, and do not shake it. The cream will separate to the top and be much easier to whip. Also make sure you are using full-fat coconut milk, not lite, which has too much water to foam properly.

### Can I use a different milk?

Absolutely. Unsweetened almond milk or cashew milk works well for the base liquid portion, but you will need the thick coconut cream specifically for the foam layer since it has the fat content needed to whip up. Almond milk will not foam the same way.

### How do I make my own cold brew at home?

Combine 1 cup of coarsely ground coffee with 4 cups of cold filtered water in a large jar. Stir, cover, and refrigerate for 12 to 24 hours. Strain through a fine mesh strainer lined with a paper coffee filter. The result is a concentrate. Dilute with water or milk to your preferred strength. It keeps in the fridge for up to two weeks.

### Can I make this hot instead of iced?

Sure. Skip the ice, warm your coconut milk base gently on the stovetop (do not boil it), add the date caramel and stir well, then pour your hot brewed coffee over the top and finish with the coconut foam. It is a completely different but equally cozy drink.

## Dutch Bros-Inspired Paleo Caramel Macchiato Cold Brew

A rich, creamy, naturally sweetened cold brew macchiato loaded with homemade date caramel and coconut milk foam, inspired by the Dutch Bros menu but made with zero junk, no refined sugar, no dairy, no drive-through guilt.

- Prep time: 10 min
- Cook time: 5 min
- Total time: 15 min
- Servings: 1 serving

### Ingredients

- 1 cup cold brew coffee concentrate, diluted to taste (or strong brewed coffee, chilled)
- 3/4 cup full-fat coconut milk, divided (use the thick cream from the top of the can for foam, thin liquid for the base)
- 4 Medjool dates, pitted
- 3 tablespoons hot water (for the date caramel)
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon cinnamon
- 1 cup ice cubes

### Instructions

1. Make the date caramel: combine the pitted Medjool dates and hot water in a small blender or food processor. Add the vanilla extract and sea salt. Blend on high for 60 to 90 seconds, scraping down the sides as needed, until you have a completely smooth, thick caramel paste. If it is too thick to blend, add hot water one teaspoon at a time. Set aside.
2. Make the coconut milk foam: spoon 3 to 4 tablespoons of the thick coconut cream from the top of the can into a small bowl or jar. Add the cinnamon. Use a handheld milk frother or a small whisk and whisk vigorously for 30 to 45 seconds until the cream is light, airy, and slightly thickened. Set aside.
3. Assemble the drink: add the ice to a tall glass. Pour in the thinner coconut milk liquid first, then pour the cold brew over the ice.
4. Add the date caramel: spoon 1 to 2 heaping tablespoons of the date caramel directly into the drink. Stir gently once or twice, or leave it to swirl on its own as you drink, either way is perfect.
5. Top with the cinnamon coconut foam. Add an extra pinch of cinnamon or sea salt on top if you want. Serve immediately with a wide straw.
