Green beans deserve better. Most people either drown them in a casserole full of stuff that's not doing them any favors, or they steam them into oblivion and then wonder why nobody wants seconds. I was the second type for a long time. Sad, mushy, forgettable green beans. Not anymore. This recipe is what I make when I need a side dish that actually gets eaten. Every time. The blanch-then-sear method gives you beans that are bright, a little blistered, and tender without being soft. The ghee-fried garlic slices get genuinely crispy, not just cooked, and those toasted almonds add this buttery crunch that makes the whole thing feel way more special than the effort involved. Ready in 20 minutes. One skillet. Paleo, Whole30, all of it. This is the green bean recipe I wish I had years ago.

## Nutritional Benefits

### Green Beans

- A solid source of fiber, vitamin C, and vitamin K, which supports bone health.
- Contain folate and manganese, two nutrients a lot of us are running low on.
- Low in natural sugars and easy on blood sugar, which matters if you're paying attention to that.

### Garlic

- Allicin, the compound that gives garlic its punch, has well-documented antimicrobial and anti-inflammatory properties.
- Supports healthy blood pressure and cardiovascular function.
- Even when crisped up in fat, garlic retains a meaningful amount of its beneficial compounds.

### Ghee

- Rich in fat-soluble vitamins A, D, E, and K2, especially when sourced from grass-fed cows.
- Contains butyrate, a short-chain fatty acid that feeds the cells lining your gut and helps keep inflammation in check.
- A clean, stable cooking fat with a high smoke point, so it doesn't oxidize and turn problematic under heat the way seed oils do.

### Slivered Almonds

- Provide healthy monounsaturated fats, vitamin E, and magnesium.
- Add protein and fiber that help make this side dish more satisfying.
- Toasting them brings out a depth of flavor and improves the texture without adding anything artificial.

## FAQs

### Can I use frozen green beans instead of fresh?

You can, but the texture will be softer and you won't get the same blistered sear. If frozen is all you have, thaw them completely and pat them very dry before they hit the hot pan. Fresh really does make a difference here.

### Can I skip the blanching step?

You can go straight to sautéing if you're short on time, but you'll need to add a splash of water to the pan and cover it briefly to steam the beans through. The blanch-and-dry method gives you better color and a nicer sear, so I recommend it when you have the extra few minutes.

### Is this recipe Whole30 compliant?

Yes. Every ingredient in this recipe is Whole30 compliant. Ghee is approved, and none of the other ingredients contain anything off the list.

### Can I make this ahead of time?

The beans are best fresh out of the skillet. If you need to prep ahead, blanch and dry the beans and pre-toast the almonds, then store separately. Do the final sauté and crispy garlic right before serving.

### What can I substitute for almonds if there's a nut allergy?

Toasted pumpkin seeds (pepitas) are a great swap. They get nutty and a little crunchy when toasted in the dry pan and pair really well with the garlic and lemon.

### Can I use avocado oil instead of ghee?

Absolutely. Avocado oil has a high smoke point and a neutral flavor. It keeps this fully dairy-free if that's what you need. The flavor will be a little lighter since you lose that rich, buttery quality of ghee, but it still works really well.

## Sautéed Green Beans with Crispy Garlic and Toasted Almonds

Fresh green beans sautéed in ghee until just tender, tossed with golden crispy garlic slices, toasted slivered almonds, a squeeze of lemon, and a hit of red pepper flakes. Simple, bold, and paleo all the way through.

- Prep time: 8 min
- Cook time: 12 min
- Total time: 20 min
- Servings: 4 servings

### Ingredients

- 1 lb fresh green beans, trimmed
- 2 tbsp ghee (or grass-fed butter)
- 6 cloves garlic, thinly sliced
- 1/3 cup slivered raw almonds
- 1/2 tsp red pepper flakes (adjust to taste)
- 1/2 tsp fine sea salt, plus more to taste
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh flat-leaf parsley, chopped (optional, for garnish)

### Instructions

1. Bring a large pot of salted water to a boil. Add the trimmed green beans and blanch for 2 minutes, just until bright green and barely tender. Drain immediately and transfer to a bowl of ice water for 1 minute to stop cooking. Drain again and pat dry with a clean kitchen towel. Dry beans are the secret to a good sear, so don't skip this step.
2. Heat a large skillet (cast iron works great here) over medium heat. Add the slivered almonds in a single layer and toast dry, stirring frequently, for 2 to 3 minutes until golden and fragrant. Watch them close because they go from golden to burned fast. Remove to a small bowl and set aside.
3. In the same skillet, melt the ghee over medium-low heat. Add the thinly sliced garlic and let it cook slowly, stirring often, for 3 to 4 minutes until the slices turn light golden and start to crisp up. Scoop the garlic out with a slotted spoon and add it to the bowl with the almonds. Leave all that garlicky ghee right in the pan.
4. Crank the heat up to medium-high. Add the blanched, dried green beans to the skillet in a single layer. Let them sit undisturbed for about 1 minute so they get a little char, then toss and cook another 1 to 2 minutes. You want tender-crisp with a few blistered spots.
5. Season the beans with sea salt, black pepper, and red pepper flakes. Drizzle the lemon juice over everything and toss to coat. Taste and adjust salt.
6. Pull the pan off the heat. Scatter the crispy garlic and toasted almonds over the top, then finish with lemon zest and fresh parsley if using. Serve immediately right out of the skillet.
