My smoker does not get used just for brisket. That took me longer to figure out than it should have, but once I started putting vegetables on those grates, everything changed. Real wood smoke does something to a portobello mushroom or a thick slab of eggplant that an oven simply cannot replicate. You get this low, slow concentration of flavor, a little caramelization on the edges, and a depth that makes the whole plate taste like something you worked hard on. You kind of did, but mostly the smoker did the work. This dinner is completely plant-based and completely paleo. It is the kind of plate that makes people who think they need meat at every meal pause and actually reconsider. The whipped herb cauliflower underneath is silky and garlicky. The chimichurri on top is aggressive and bright and cuts right through the smoke. Together, they make the vegetables the absolute main event, which is exactly where they belong.

## Nutritional Benefits

### Why This Plate Is Working Hard for You

- Cauliflower is a cruciferous vegetable rich in vitamin C, vitamin K, and choline. Research published in the journal Nutrients (2018) links cruciferous vegetable intake to broad nutritional support across multiple body systems.
- Eggplant contains nasunin, an anthocyanin antioxidant found in the purple skin. According to research reviewed in the journal Molecules (2020), nasunin may help protect cell membranes from oxidative stress.
- Portobello mushrooms are one of the few non-animal food sources of vitamin D when exposed to UV light during growing. The USDA notes they also provide B vitamins including riboflavin, niacin, and pantothenic acid.
- Parsley, the base of the chimichurri, is unusually dense in vitamin K. The NIH Office of Dietary Supplements notes that vitamin K is essential for proper blood clotting and bone metabolism.
- Extra-virgin olive oil, used throughout this recipe, is the primary fat in the Mediterranean dietary pattern. A large body of research, including studies cited by Harvard T.H. Chan School of Public Health, associates regular olive oil consumption with cardiovascular health support.
- Rainbow carrots provide beta-carotene alongside other carotenoids depending on color. The National Institutes of Health notes that beta-carotene is converted to vitamin A in the body, which is important for vision, immune function, and skin health.

## FAQs

### Can I make this without a smoker?

Yes. Roast all the vegetables on sheet pans at 425°F for 25 to 30 minutes, flipping once halfway. You will not get true wood smoke flavor, but the chimichurri and whipped cauliflower still make for a seriously good dinner. If you want to sneak in some smoke, add 1/2 teaspoon of smoked paprika extra to the oil rub and use a cast iron grill pan for the zucchini and eggplant.

### What wood is best for smoking vegetables?

Go mild. Applewood and cherry are the two I come back to most for vegetables. They add a gentle, slightly sweet smoke that does not overwhelm. Hickory and mesquite are much stronger and can make delicate vegetables taste bitter if you use too much. Pecan is a nice middle ground.

### Is this recipe Whole30?

Yes, every ingredient here is Whole30 compliant. No sweeteners, no grains, no legumes, no dairy. Just real whole food and good fat.

### Can I prep any of this ahead?

The chimichurri is actually better made a few hours ahead or even the night before. It keeps in the fridge for up to 5 days. The whipped cauliflower reheats well with a splash of extra olive oil stirred in. The smoked vegetables are best fresh off the smoker, but leftovers are genuinely great chopped into a salad the next day.

### My eggplant got mushy. What happened?

Two things can cause this. First, eggplant holds a lot of water and if it steams instead of smokes, it collapses. Pat it completely dry before oiling it. Second, if your smoker temperature crept above 250°F, it cooked faster than it should have. Keep it steady at 225°F and check it around the 60-minute mark.

### Can I add a protein to this?

Absolutely. Smoked salmon laid over the top right before serving is incredible. Sliced grilled chicken thighs work great. Even a couple of fried eggs if you want to keep it simple. The whipped cauliflower and chimichurri play well with basically everything.

- Prep time: 25 min
- Cook time: 1 hr 30 min
- Total time: 1 hr 55 min
- Servings: 4 servings

### Ingredients

- FOR THE SMOKED VEGETABLES:
- 2 medium zucchini, sliced lengthwise into 1/2-inch planks
- 1 large eggplant, sliced into 1/2-inch rounds
- 4 large portobello mushroom caps, stems removed
- 3 medium rainbow carrots, halved lengthwise
- 1 large red onion, cut into 1/2-inch rings (skewered or in a grill basket)
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- FOR THE WHIPPED HERB CAULIFLOWER:
- 1 large head cauliflower, cut into florets (about 6 cups)
- 3 tablespoons extra-virgin olive oil
- 3 cloves garlic, peeled
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh flat-leaf parsley, roughly chopped
- 1 tablespoon fresh chives, roughly chopped
- FOR THE CHIMICHURRI:
- 1 cup fresh flat-leaf parsley, tightly packed
- 1/4 cup fresh oregano leaves
- 4 cloves garlic
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 3 tablespoons red wine vinegar
- 1/2 cup extra-virgin olive oil

### Instructions

1. MAKE THE CHIMICHURRI (do this first so flavors develop): Combine parsley, oregano, garlic, red pepper flakes, salt, pepper, and red wine vinegar in a food processor. Pulse 8 to 10 times until roughly chopped. With the motor running, stream in the olive oil until just combined. You want texture, not a puree. Transfer to a jar and let it sit at room temperature while you cook everything else. The longer it sits, the better it gets.
2. PREHEAT YOUR SMOKER to 225°F. Use applewood, cherry, or pecan pellets or chips. These fruit and nut woods are mild enough to complement vegetables without overpowering them.
3. PREP THE VEGETABLES: Pat the eggplant rounds dry with paper towels (this matters, eggplant holds water and you want smoke, not steam). In a large bowl, whisk together the olive oil, smoked paprika, garlic powder, salt, and pepper. Add all the vegetables and toss well to coat every cut surface.
4. ARRANGE ON SMOKER GRATES: Lay the zucchini planks, eggplant rounds, and portobello caps directly on the grates gill-side up. Place carrots and red onion rings in a grill basket or on a sheet of foil with holes poked in it. Smoke at 225°F for 60 to 75 minutes, until the vegetables are tender throughout and have a visible, lightly caramelized surface. Carrots will take the longest. Check at 60 minutes and go longer if needed.
5. WHILE THE VEGETABLES SMOKE, MAKE THE WHIPPED CAULIFLOWER: Bring a large pot of salted water to a boil. Add the cauliflower florets and garlic cloves. Boil for 12 to 14 minutes until the cauliflower is completely tender and falls apart when poked with a fork. Drain thoroughly and shake out as much water as possible.
6. Transfer the drained cauliflower and garlic to a high-powered blender or food processor. Add the olive oil, salt, and pepper. Blend on high for 60 to 90 seconds, scraping down the sides, until completely smooth and creamy. Add the parsley and chives, then pulse 4 to 5 times just to distribute the herbs. Taste and adjust salt. Keep warm.
7. PULL THE VEGETABLES when they are done. Let them rest on a cutting board for 3 to 5 minutes. Slice the portobello caps into thick strips.
8. TO PLATE: Spoon a generous swoosh of whipped herb cauliflower onto each plate or a large shared platter. Arrange the smoked vegetables on top, varying heights and colors. Spoon chimichurri generously over everything. Pass extra chimichurri at the table because people will want more.
