A turkey burger, exciting? I didn't think it was possible. Turkey has a reputation, and most of the time that reputation is deserved. Dry. Bland. The sad second cousin of a real burger. But then I started playing around with chipotle and coconut aminos in the mix, and suddenly we were somewhere completely different. These smoky chipotle turkey burgers are juicy, deeply flavored, and finished with an avocado lime slaw that makes you forget you ever wanted a bun in the first place. This is a lunch I actually look forward to. And I make a double batch almost every time because the patties hold up great in the fridge.

### Can I grill these instead of using a skillet?

Yes, absolutely. Ground turkey can be tricky on the grill because it sticks more than beef, so make sure your grates are well-oiled and very hot before the patties go on. I'd also recommend chilling the formed patties in the fridge for 20 minutes before grilling so they hold together better. Cook them over medium-high heat for about 6 to 7 minutes per side.

### Is this recipe Whole30 compliant?

It is, with one small swap. Just leave out the teaspoon of honey in the slaw dressing. The lime juice and avocado oil carry the dressing beautifully on their own. Also double-check your chipotle peppers in adobo sauce to make sure the brand you're using doesn't have sugar or non-compliant additives. If you can't find a clean one, the chipotle powder and smoked paprika combo listed in the ingredients works just as well.

### Can I make these patties ahead of time?

Yes, and honestly I recommend it. You can mix and form the patties up to 24 hours in advance, store them covered in the fridge, and cook them when you're ready. You can also cook them fully ahead of time and reheat in a skillet over medium-low heat with a splash of water and a lid to keep them moist. I wouldn't make the avocado slaw more than a couple of hours ahead since the avocado will start to brown.

### What can I serve these with besides lettuce wraps?

These are great on their own with just the slaw piled on top. You could also serve them over a bed of arugula, with sliced tomatoes and pickled red onions on the side, or alongside roasted sweet potato fries for a more substantial plate. If you want to keep it super simple, a fried egg on top is never wrong.

### Can I use ground chicken instead of turkey?

You can. Ground chicken has a very similar texture and fat content to ground turkey. Just be aware it can be a little stickier and softer when raw, so handle the patties gently. Everything else stays the same.
