Stuffed bell peppers are one of those dinners I keep coming back to no matter what. There is something so satisfying about a whole meal packed into a pepper. It feels like effort but it actually is not. This version swaps out the white rice for cauliflower rice, keeps the seasoning bold and smoky, and uses fire-roasted tomatoes because regular canned tomatoes are just not as interesting. The filling is rich, a little spicy, and deeply savory. Your family will not miss the rice, I promise. And if they do, that's their problem. This is the kind of paleo dinner that earns its keep. It reheats beautifully, it works for meal prep, and it tastes like real food. Because it is.

## Nutritional Benefits

### Grass-Fed Ground Beef

- A complete protein source with all essential amino acids to support muscle repair and satiety.
- Rich in heme iron, which is far more bioavailable than plant-based iron sources.
- Provides zinc, B12, and conjugated linoleic acid (CLA), especially when sourced from grass-fed cattle.

### Bell Peppers

- One of the highest natural sources of vitamin C, which supports immune function and collagen production.
- Contain carotenoids like beta-carotene and lutein, powerful antioxidants that support eye health.
- Relatively low in carbohydrates while still providing fiber and a satisfying natural sweetness when roasted.

### Cauliflower Rice

- A smart grain-free swap that dramatically lowers the carbohydrate load compared to white or brown rice.
- Provides glucosinolates, sulfur compounds associated with liver detox support and cellular protection.
- High in vitamin K and folate, both critical for cardiovascular and cellular health.

### Fire-Roasted Tomatoes and Garlic

- Fire-roasted tomatoes are a concentrated source of lycopene, an antioxidant linked to reduced inflammation.
- Garlic contains allicin and organosulfur compounds with well-documented antimicrobial and anti-inflammatory properties.
- Together they add flavor depth without any need for sugar, thickeners, or refined additives.

## FAQs

### Can I make these stuffed peppers ahead of time?

Yes, and they are honestly even better the next day. You can assemble the filled peppers and store them covered in the fridge for up to 24 hours before baking. Or bake them fully, let them cool, and refrigerate for up to 4 days. Reheat in a 350°F oven for about 15 minutes or until warmed through.

### Can I use a different protein?

Absolutely. Ground turkey, ground bison, or even ground pork all work well here. Ground turkey is leaner so you may want to add a small drizzle of extra avocado oil to the filling so it does not dry out. Bison is fantastic if you can find it.

### Are these Whole30 compliant?

Yes, every ingredient in this recipe is Whole30 compliant. Just double-check your canned fire-roasted tomatoes and tomato paste labels to make sure there is no added sugar or citric acid from suspicious sources. Most mainstream brands are fine.

### My family does not love spice. Can I tone it down?

Of course. Skip the red pepper flakes entirely and reduce the chili powder to 1/4 teaspoon. The smoked paprika gives you all that smoky depth without any real heat, so the flavor is still there even on the milder setting.

### Can I freeze these?

Yes. Let them cool completely, then store in an airtight container or wrap individually in plastic wrap and freeze for up to 2 months. Thaw overnight in the fridge and reheat in the oven. The texture of the peppers softens a bit more after freezing but the flavor is still great.

If you make these, drop a comment below and tell me how it went. Did you keep it mild or crank up the heat? Did you sneak some for lunch the next day? (No judgment, I always do.) Pin this one, share it with your people, and if you are new around here, welcome. This is what real-food dinner looks like at my house.

## Smoky Ground Beef and Cauliflower Rice Stuffed Bell Peppers

Tender bell peppers loaded with smoky seasoned ground beef, cauliflower rice, fire-roasted tomatoes, and fresh herbs. A hearty, grain-free dinner the whole family will actually ask for again.

- Prep time: 15 min
- Cook time: 40 min
- Total time: 55 min
- Servings: 4 servings (8 pepper halves)

### Ingredients

- 4 large bell peppers (any color), halved lengthwise, seeds and ribs removed
- 1.5 lbs ground beef (80/20 preferred)
- 2 cups riced cauliflower (fresh or thawed from frozen)
- 1 (14.5 oz) can fire-roasted diced tomatoes, drained
- 3 cloves garlic, minced
- 1 medium yellow onion, finely diced
- 2 tablespoons tomato paste
- 1 tablespoon avocado oil
- 1.5 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon fine sea salt, plus more to taste
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons fresh flat-leaf parsley, chopped (for topping)
- 1 tablespoon fresh cilantro, chopped (for topping, optional)

### Instructions

1. Preheat your oven to 400°F. Arrange the pepper halves cut-side up in a large baking dish. Drizzle lightly with avocado oil and sprinkle with a pinch of salt. Roast for 15 minutes, until just starting to soften. Remove from the oven and set aside.
2. While the peppers roast, heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Add the diced onion and cook for 3 to 4 minutes, stirring occasionally, until translucent. Add the garlic and cook for another 30 seconds until fragrant.
3. Add the ground beef to the skillet. Break it apart with a wooden spoon and cook for 6 to 7 minutes until browned through. Drain any excess fat if needed, but leave a little for flavor.
4. Stir in the smoked paprika, cumin, oregano, chili powder, salt, black pepper, and red pepper flakes if using. Toast the spices in the beef for about 1 minute, stirring constantly.
5. Add the tomato paste and stir to coat everything evenly. Cook for another minute.
6. Stir in the fire-roasted diced tomatoes and cauliflower rice. Reduce heat to medium and cook for 4 to 5 minutes, stirring occasionally, until the cauliflower rice is tender and most of the liquid has absorbed. Taste and adjust seasoning.
7. Spoon the beef and cauliflower rice filling generously into each pre-roasted pepper half, mounding it up. Do not be shy here. Pack it in.
8. Return the filled peppers to the oven and bake for 18 to 20 minutes, until the peppers are fully tender and the tops of the filling are just starting to caramelize.
9. Remove from the oven and let rest for 5 minutes. Top with fresh parsley and cilantro before serving.
