Okay, I need to talk about guacamole for a second. Because the stuff you make by mashing avocado with lime and calling it a day? Fine. But this? This is something else entirely. I started roasting the tomatoes one afternoon because I had a sad little container of cherry tomatoes that needed to be used up, and I have not made guacamole any other way since. Those tomatoes blister and caramelize and get all jammy and smoky in a hot oven, and when you fold them into fresh mashed avocado, something kind of magical happens. Add toasted pepitas for crunch and a hit of cumin and smoked paprika, and you have a dip that is genuinely hard to walk away from. It is paleo, Whole30, grain-free, dairy-free, and just real food doing what real food does best.

## Nutritional Benefits

### Avocado: Healthy Fats Your Body Actually Needs

- Rich in monounsaturated oleic acid, the same anti-inflammatory fat found in olive oil.
- A single avocado delivers nearly 10 grams of fiber, supporting gut health and steady blood sugar.
- Loaded with potassium (more than a banana), which supports healthy blood pressure and muscle function.
- Contains fat-soluble vitamins E and K, which require dietary fat to absorb properly, so the fat in avocado literally helps you use its own nutrients.

### Pepitas: A Small Seed Packing a Real Punch

- One of the best plant-based sources of magnesium, a mineral that most people are deficient in and that plays a role in over 300 body processes.
- Contain zinc, which is critical for immune function, skin health, and hormonal balance.
- Provide a solid hit of protein and healthy fats that help you feel satisfied and not like you need to eat the whole bowl in one sitting (though no judgment if you do).
- Rich in antioxidants including vitamin E, which helps protect cells from oxidative stress.

### Roasted Tomatoes: More Lycopene, Less Fuss

- Cooking tomatoes actually increases the bioavailability of lycopene, a powerful antioxidant linked to reduced risk of certain chronic diseases.
- Tomatoes provide vitamin C, potassium, and folate in a low-calorie, low-sugar package.
- Roasting concentrates the natural sugars and deepens the flavor without adding anything artificial.

### Lime Juice and Fresh Herbs: More Than Just Flavor

- Fresh lime juice is a source of vitamin C and also helps slow the oxidation of avocado so your guacamole stays green longer.
- Cilantro contains compounds that may support the body's natural detoxification pathways.
- Garlic delivers allicin, a sulfur compound with documented antimicrobial and anti-inflammatory properties.

## FAQs

### How do I keep guacamole from turning brown?

The lime juice in this recipe does most of the work. If you need to store leftovers, press a piece of plastic wrap directly onto the surface of the guacamole so there is zero air contact, then refrigerate. It will keep well for up to 24 hours that way. You can also add a thin layer of water on top before covering, just pour it off and give it a stir before serving.

### Can I make this ahead for a party?

Yes, with a few adjustments. Roast the tomatoes and toast the pepitas up to a day ahead and store them separately. Mash and season the avocado base right before serving for the best color and texture, then top with the pre-made toppings. Trying to make the whole thing a full day in advance is asking for brown, watery guac, and nobody wants that.

### Is this recipe Whole30 compliant?

Yes, every ingredient in this recipe is Whole30 compliant. Just make sure whatever you are using for dipping is also compliant, raw vegetables are your safest bet if you are mid-round. Plantain chips are technically Whole30 compatible depending on the brand, but check the label for any added sugar or non-compliant oils.

### My avocados are not ripe yet. What do I do?

Patience is the only real answer here. You cannot rush a truly unripe avocado and get good guacamole. To speed things up, put the avocados in a paper bag with a banana or apple and leave them at room temperature. The ethylene gas from the fruit speeds up ripening, usually within 24 to 48 hours. A ripe avocado should give slightly when you press the skin but not feel mushy.

### What can I serve this with besides chips?

So many things. Sliced cucumber rounds, celery sticks, bell pepper strips, endive leaves, and jicama sticks all work great and keep things paleo and Whole30\. You can also spoon it over grilled chicken or fish, use it as a topping for a burger, or stuff it into lettuce wraps. Honestly, I have eaten it with a spoon straight out of the bowl and felt zero regret.

## Smoky Roasted Tomato Guacamole with Toasted Pepitas and Fresh Herbs

This is not your average bowl of mashed avocado. Charred, jammy roasted tomatoes, toasted pepitas, fresh cilantro, and a hit of smoked paprika take guacamole from a sidekick to the main event. Strictly paleo, made in under 30 minutes, and honestly hard to stop eating.

- Prep time: 10 min
- Cook time: 15 min
- Total time: 25 min
- Servings: 6 servings

### Ingredients

- 3 ripe Hass avocados, halved and pitted
- 1 cup cherry tomatoes
- 1 tablespoon avocado oil
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon fine sea salt, plus more to taste
- 3 tablespoons raw pepitas (pumpkin seeds)
- 3 cloves garlic, minced
- 1 small jalapeño, seeded and finely diced (leave seeds in for more heat)
- 3 tablespoons fresh lime juice (about 2 limes)
- 1/4 cup fresh cilantro, roughly chopped
- 2 tablespoons red onion, finely minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- Flaky sea salt, for finishing
- Plantain chips or sliced raw vegetables, for serving

### Instructions

1. Preheat your oven to 425°F and line a small baking sheet with parchment paper.
2. Toss the cherry tomatoes with the avocado oil, smoked paprika, and 1/4 teaspoon fine sea salt. Spread them on the prepared baking sheet in a single layer. Roast for 13 to 15 minutes until the skins are blistered and starting to char at the edges. Remove from the oven and let them cool for 5 minutes.
3. While the tomatoes roast, place a small dry skillet over medium heat. Add the raw pepitas and toast them, stirring frequently, for 3 to 4 minutes until they start to pop and turn golden. Transfer immediately to a plate to stop cooking. Set aside.
4. Scoop the avocado flesh into a large mixing bowl. Add the lime juice right away to help preserve the color. Use a fork to mash the avocado to your preferred texture, I like mine a little chunky, not baby food smooth.
5. Add the minced garlic, jalapeño, red onion, cumin, black pepper, and cilantro to the bowl. Stir everything together until well combined.
6. Gently fold in about two thirds of the roasted cherry tomatoes, pressing some of them lightly as you fold so they release their smoky, jammy juices into the guacamole. Taste and adjust salt and lime juice as needed.
7. Transfer the guacamole to a serving bowl. Top with the remaining roasted tomatoes, the toasted pepitas, a few extra cilantro leaves, and a generous pinch of flaky sea salt.
8. Serve immediately with plantain chips or a spread of raw vegetables like cucumber rounds, sliced bell pepper, and celery sticks.
