## Zuppa Toscana

This Zuppa Toscana is made with crispy bacon, Italian sausage, potatoes, and kale in a creamy coconut milk broth for a rich, comforting, and Paleo-friendly soup.

- Prep time: 10 min
- Cook time: 30 min
- Total time: 40 min
- Servings: 4 servings

### Ingredients

- 6 slices bacon, cut into 1” pieces
- 1 lb Sweet or spicy Italian sausage meat
- Crushed red pepper, to taste
- 1 medium yellow onion, diced
- 5 cloves garlic, minced
- 2 large Russet potatoes (about 1.5 lbs), peeled and cut into 1/2” cubes
- 4 cups chicken bone broth
- 5 cups kale, chopped
- 1 cup full-fat coconut milk
- Sea salt and pepper to taste

### Instructions

1. In a large pot or Dutch oven, cook the bacon pieces over medium heat until crispy. Remove the bacon and set it aside, leaving the rendered fat in the pot.
2. Add the Italian sausage to the pot and cook until browned. Add the diced onion and minced garlic, cooking until the onion is translucent.
3. Stir in the peeled and cubed potatoes, then pour in the chicken bone broth. Bring the soup to a boil, then reduce the heat and simmer until the potatoes are tender, about 10-12 minutes.
4. Add the chopped kale to the soup and continue simmering until the kale is wilted, about 5 minutes. Stir in the coconut milk and season with sea salt and pepper to taste.
5. Serve the soup hot, garnished with the crispy bacon pieces and a sprinkle of crushed red pepper if desired.
