Can I use canned crab meat instead of fresh lump crab?
You can, and it will still taste good. Look for wild-caught canned lump crab packed in water with no added fillers or preservatives. Drain it really well and pick through it carefully for any shell bits. Fresh will always give you better texture and flavor, but a good quality canned crab is a totally reasonable weeknight shortcut.
My avocados are not perfectly ripe. Can I still make this?
For this recipe, ripe is really important. You want avocados that yield easily to gentle pressure. If yours are firm, leave them on your counter for a day or two. If you are in a hurry, placing them in a paper bag with a banana speeds things up. An underripe avocado here will be hard to shape and the flavor will be flat.
How far ahead can I prep this?
The mango drizzle can be made up to 4 hours ahead and kept covered in the fridge. The crab mixture is best made no more than 2 hours ahead. The avocado should be sliced right before serving or it will oxidize and turn brown. If you need to get ahead, prep everything separately and assemble just before your guests sit down.
Is this Whole30 compliant?
Almost exactly as written, but the raw honey in the mango drizzle is not Whole30 approved. Just leave it out. The mango is naturally sweet enough that you honestly may not miss it at all. Everything else on the ingredient list is fully Whole30 compliant.
What if I do not have a ring mold?
No ring mold, no problem. You can slice the avocado and fan it out on the plate as a base, then pile the crab mixture right on top and let it be more rustic. Or pack the crab into a small ramekin, press it down, then flip it onto the avocado. It might not be perfectly round but it will taste exactly the same and honestly a rustic stack has its own charm.
