I made these for the first time on a random Tuesday night because I had chicken breast and a pack of bacon and absolutely zero desire to make anything complicated. I threw a glaze together, wrapped everything up, stuck it in the oven, and by the time my family smelled what was happening they were already standing in the kitchen hovering. That is the kind of recipe this is. It looks like you tried. You barely did. And the dipping sauce, that spicy almond situation, is the thing that takes it from good to people-asking-for-the-recipe good. These are paleo through and through. Clean protein, good fat from the bacon, a touch of raw honey that your body actually knows what to do with. No garbage oils, no fillers, no weird ingredients your grandmother would not recognize. Just real food doing what real food does.

Nutritional Benefits

Clean Protein from Chicken and Bacon

  • Chicken breast is a lean, complete protein with all essential amino acids your body needs for muscle repair, enzyme production, and daily function.
  • Pasture-raised bacon adds a dose of fat-soluble nutrients including B12, zinc, and selenium, nutrients most people are quietly deficient in.
  • Together, the protein and fat combo here keeps blood sugar steady, which means no post-snack energy crash.

Raw Honey vs. Refined Sugar

  • Raw honey retains trace enzymes, antioxidants, and minerals that get stripped out of processed sweeteners.
  • Because the honey is used as a glaze and not dumped into a batter, the amount per bite is small, you get the flavor without the sugar bomb.
  • Apple cider vinegar in the glaze also supports digestive enzyme activity and helps balance blood sugar response.

Almond Butter Dipping Sauce Nutrition

  • Almond butter delivers vitamin E, magnesium, and monounsaturated fats, all things that support heart health and reduce inflammation.
  • Coconut aminos give you that umami depth with far less sodium than conventional soy sauce, plus a small amount of naturally occurring amino acids.
  • Garlic provides allicin, one of the most studied antimicrobial and immune-supporting compounds in any kitchen.

FAQs

Can I make these ahead of time?

Yes. You can wrap the chicken in bacon and refrigerate the unbaked bites on the rack for up to 24 hours. Mix the glaze ahead of time too and keep it covered on the counter or in the fridge. Just bake fresh when you are ready to serve, they are best straight out of the oven.

What kind of bacon should I use?

Thin-cut bacon is what you want here. Thick-cut takes longer to crisp and by the time the bacon is done the chicken can overcook. Look for sugar-free, uncured bacon with no nitrates if you can find it, most decent grocery stores carry at least one brand.

How do I know the chicken is cooked through?

The safest check is an instant-read thermometer, you are looking for 165°F in the center of a bite. Visually, the chicken should not look translucent at all, and the bacon should be fully set and crispy.

Can I use a different nut butter for the dipping sauce?

Absolutely. Cashew butter makes a creamier, milder sauce. Sunflower seed butter works if you are nut-free. Just stick to an unsweetened, single-ingredient variety so you control what goes into it.

Is this recipe Whole30 compliant?

Not quite as written, because Whole30 does not allow honey or any sweetener including in a glaze. To make it Whole30 compatible, swap the honey in the glaze for a little coconut aminos and smoked paprika for color and depth, and leave the honey out of the dipping sauce too.

  • Servings: 24 bites (serves 6 to 8)

Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes (about 24 pieces)
  • 12 strips thin-cut bacon, cut in half crosswise
  • 3 tablespoons raw honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • Toothpicks or small skewers for securing
  • FOR THE SPICY ALMOND DIPPING SAUCE:
  • 1/3 cup unsweetened almond butter
  • 2 tablespoons coconut aminos
  • 1 tablespoon fresh lime juice
  • 1 teaspoon raw honey
  • 1 teaspoon sriracha (check for paleo-compliant brand) or 1/4 teaspoon cayenne pepper
  • 1 small garlic clove, finely grated
  • 2 to 4 tablespoons warm water (to thin to desired consistency)

Instructions

  1. Preheat your oven to 425°F. Line a large rimmed baking sheet with parchment paper and place a wire rack on top. This is important, the rack lets air circulate so the bacon crisps up on all sides instead of steaming.
  2. Pat the chicken cubes dry with paper towels. Season them lightly with sea salt, garlic powder, and black pepper.
  3. In a small bowl, whisk together the raw honey, apple cider vinegar, and smoked paprika. Set this glaze aside.
  4. Wrap each chicken cube tightly with one half-strip of bacon, securing it with a toothpick through the center. Place the wrapped bites seam-side down on the wire rack.
  5. Slide the pan into the oven and bake for 14 minutes. The bacon should be starting to render and firm up.
  6. Pull the pan out and brush the tops generously with the honey glaze. Return to the oven for 4 to 5 more minutes, until the glaze is caramelized and the bacon is fully crispy. Watch them closely in that last stretch, honey glaze can go from beautiful to burnt fast.
  7. While the bites finish baking, make the dipping sauce. In a medium bowl, whisk together the almond butter, coconut aminos, lime juice, raw honey, sriracha or cayenne, and grated garlic. Add warm water one tablespoon at a time until the sauce is smooth and pourable but still has some body.
  8. Remove the bites from the oven and let them rest on the rack for 2 to 3 minutes before serving. Arrange on a platter and serve the spicy almond dipping sauce on the side.
