It is, as long as you leave out the optional honey. Every other ingredient, kiwi, fresh mint, coconut water, sparkling water, lime juice, and sea salt, is fully Whole30 approved. Just make sure your coconut water label has no added sugars or natural flavors listed.

Can I make this ahead of time?

You can prep the kiwi-mint base up to 24 hours ahead and store it covered in the fridge. Do not add the sparkling water until right before you serve it or you will lose all the fizz. Stir the base, strain it over ice, then top with fresh sparkling water.

What if I do not have a blender?

No problem. Peel the kiwis and mash them really well with a fork in a bowl until they break down into a chunky pulp. Then stir in the coconut water and press the whole mixture through a fine-mesh strainer. It takes an extra two minutes but works just as well.

Can I use a different fruit instead of kiwi?

Absolutely. This base works great with cucumber, fresh pineapple, or green grapes. The key is using fresh fruit, not canned or jarred, and pairing it with mint and a sour element like lime juice. That trio is what makes the flavor pop.

Is sparkling water paleo?

Plain sparkling water, just water and carbonation, is completely paleo and Whole30 compliant. Just avoid anything with natural flavors listed as an ingredient, citric acid, or sweeteners. La Croix, Topo Chico, and plain club soda without additives are all fine.

My kiwis are not very sweet. What should I do?

A touch more honey (or a couple of pitted Medjool dates blended in) can bring up the sweetness if your kiwis are on the tart side. You can also let the kiwis sit on your counter for a day or two to ripen up. A ripe kiwi gives just slightly under pressure when you squeeze it gently.
