This usually comes down to one of two things. First, the coconut cream has to be refrigerated overnight, not just for a couple of hours. That cold time is what separates the solid cream from the liquid. Second, make sure you are using full-fat coconut cream, not coconut milk. Light coconut milk will not whip up at all. If your cream is still too soft, pop the bowl in the freezer for 10 minutes and try again.

Can I swap the strawberries for another fruit?

Absolutely. Fresh raspberries, blueberries, sliced peaches, or mango all work beautifully here. Just keep in mind that the maceration works best with juicier fruits. Blueberries can be used but they won't release as much liquid, so you can add a tiny splash of orange juice to compensate.

Is the honey Whole30 compliant?

Honey is not compliant on Whole30. To make these fully Whole30, just leave the honey out entirely. The dates in the crust provide plenty of sweetness, the coconut cream is naturally rich and slightly sweet on its own, and the strawberries are sweet enough when fresh. You really won't miss it.

Can I use walnuts instead of pecans?

Yes. Walnuts make a great swap and will give you a slightly earthier, more robust crust. Almonds work too but you will want to soak them for a couple of hours first to help them blend more smoothly with the dates. Pecans are my first choice because they process into a buttery, pliable texture that holds together really well.
