Salad as an appetizer used to feel like a cop-out to me. Like, is that really a thing? But then I started really paying attention to what actually makes people lean in at the table before a meal, and a gorgeous composed salad with contrasting textures, bold flavors, and something a little salty and crispy on top absolutely does that. This one stops people in their tracks. Every single time. The combination here sounds simple but it really works. Peppery arugula, cold juicy watermelon, that salty shatter of baked prosciutto, creamy avocado, fresh mint, and a honey lime vinaigrette that ties the whole thing together without drowning it. It is fresh and bright and feels a little fancy without any actual effort. You can have this on the table in about 25 minutes, and most of that is just the oven doing its thing with the prosciutto. This is the kind of recipe I make when people are coming over and I want them to feel taken care of right from the start. It says, 'yes, we eat real food here, and it is going to be delicious.' No apologies, no sad lettuce. Just genuinely beautiful food that is also genuinely good for you. The way it was supposed to be.

FAQs

Can I make this ahead of time?

You can prep the components ahead, slice the watermelon, make the vinaigrette, and bake the prosciutto crisps earlier in the day. Store them separately. Assemble the salad right before serving so the arugula stays fresh and the prosciutto keeps its crunch. Once dressed, this salad does not hold well.

Is this Whole30 compliant?

Almost. Honey is not technically Whole30 compliant. To make this fully Whole30, just leave the honey out of the vinaigrette. The lime and olive oil are bright enough that you honestly will not miss it much. It is still a really good dressing.

What if I cannot find good prosciutto?

Thin-sliced pancetta works beautifully here and crisps up the same way in the oven. You could also use thin bacon, though the flavor is smokier and a little more assertive. Either way, that salty crispy element is what makes the salad, so do not skip it.

Can I use a different green instead of arugula?

You can, but the peppery bite of arugula is what balances the sweet watermelon and the salty prosciutto. Baby spinach works if you need something milder, and a mix of arugula and watercress is also excellent. I would avoid romaine or iceberg here, the flavor profile needs something with a little personality.

How do I pick a good watermelon for this?

Look for one that feels heavy for its size, has a creamy yellow field spot on the bottom (that means it ripened on the ground), and sounds hollow when you thump it. For a salad, you want it cold, firm, and genuinely sweet. A mealy, pale watermelon will not do this recipe justice.

Watermelon Arugula Salad with Prosciutto Crisps and Honey Lime Vinaigrette

A stunning paleo appetizer salad with peppery arugula, juicy watermelon, crispy baked prosciutto, toasted pepitas, and a bright honey lime vinaigrette. It comes together in minutes and looks like something from a restaurant.

  • Prep time:

  • Total time:
  • Servings: 4 servings

Ingredients

  • 4 cups baby arugula, packed
  • 3 cups seedless watermelon, cut into 1-inch cubes
  • 3 oz prosciutto, torn into pieces
  • 1/4 cup raw pepitas (pumpkin seeds)
  • 1/2 small red onion, very thinly sliced
  • 1 ripe avocado, sliced
  • 1/4 cup fresh mint leaves, torn
  • For the Honey Lime Vinaigrette:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 1 teaspoon raw honey
  • 1/2 teaspoon lime zest
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F. Line a rimmed baking sheet with parchment paper. Lay the torn prosciutto pieces in a single layer on the sheet. Bake for 8 to 10 minutes until deeply golden and crisp. Watch them closely after the 7-minute mark, they go from perfect to burnt fast. Remove from oven and let cool on the pan for 2 minutes (they will crisp up more as they cool).
  2. While the prosciutto bakes, make the vinaigrette. Add the olive oil, lime juice, honey, lime zest, salt, pepper, and red pepper flakes (if using) to a small jar. Seal and shake well until combined. Taste and adjust salt or lime juice as needed.
  3. Place the thinly sliced red onion in a small bowl of cold water and let it soak for 5 minutes while you prep the rest of the salad. This takes the sharp bite off and keeps the flavor mild and pleasant. Drain and pat dry.
  4. Spread the baby arugula across a large serving platter or shallow bowl. Scatter the watermelon cubes evenly over the arugula. Lay the avocado slices across the top. Add the drained red onion, then the torn mint leaves.
  5. Drizzle about two-thirds of the vinaigrette over the salad. Break the prosciutto crisps into large shards and scatter them over the top. Sprinkle the pepitas over everything.
  6. Serve immediately with the remaining vinaigrette on the side. This salad is best eaten right away so the arugula stays perky and the prosciutto stays crispy.
