FAQs

Can I use frozen blueberries instead of fresh?

Yes, but thaw them first and pat them dry before folding into the batter. Frozen berries release a lot of liquid and can make the batter too wet and turn it purple. Fresh is always my first choice for pancakes.

My pancakes keep falling apart when I flip them. What am I doing wrong?

Two things usually cause this. First, the heat may be too high. Almond flour pancakes need medium-low heat and more patience than regular pancakes. Second, flip them only once, and only when the edges look fully set and bubbles have formed across the top. A thin, flexible spatula also helps a lot.

Can I make the batter the night before?

You can mix the dry and wet ingredients separately the night before and store them covered in the fridge, then combine them in the morning. I would not mix the full batter ahead of time because the blueberries will bleed and the batter gets too thick as it sits.

Are these Whole30 compliant?

Almost, but not quite. The honey makes them technically non-compliant with Whole30 rules. Leave out the honey and they fit. The banana provides enough natural sweetness on its own.

Can I substitute the tapioca flour with something else?

Arrowroot starch works as a 1:1 swap and is also paleo. Both help give the pancakes a little lightness and flexibility that almond flour alone does not provide. I would not skip it entirely or use coconut flour as a sub here.
