Finding a snack that kids will actually eat, that isn't loaded with garbage, can feel like a full-time job. I have been there. I have read the labels on those "healthy" kids snack bars at the grocery store and almost laughed. Corn syrup. Canola oil. A list of ingredients I cannot pronounce. No thanks. These little bites are what I reach for instead. Shredded apple, almond butter, a little honey, cinnamon, and that's basically it. No baking, no drama, and my kids devour them. I make a batch on Sunday and they're gone by Wednesday. They taste like an apple cinnamon hug, and they're legitimately good fuel. That's the whole point.

Nutritional Benefits

Almond Butter and Almond Flour

  • Almonds are a solid source of healthy monounsaturated fats and vitamin E, which supports immune function and skin health.
  • Almond butter provides a good hit of protein and fat together, which helps stabilize blood sugar so kids aren't crashing and screaming 20 minutes later.
  • Using almond flour keeps these grain-free and much lower in carbs than a typical snack bar.

Apple

  • Apples bring natural sweetness without refined sugar, plus a small dose of fiber that slows the absorption of that sugar.
  • They contain quercetin and other antioxidants that support a healthy inflammatory response.
  • The moisture from the apple keeps these bites soft and chewy even after refrigerating.

Cinnamon

  • Cinnamon isn't just there for flavor. It has well-documented properties that help support healthy blood sugar balance, which is huge for growing kids who are snacking between meals.
  • It also has natural antimicrobial properties and adds warmth without any added sugar.

Raw Honey

  • Unlike refined white sugar, raw honey contains trace enzymes, antioxidants, and minerals.
  • A small amount goes a long way here, and paired with fat and protein from the almond butter, it doesn't spike blood sugar the way processed sweeteners do.

FAQs

Can I use sunflower seed butter instead of almond butter?

Yes, absolutely. Sunflower seed butter is a great swap if you're dealing with a nut allergy. The bites will taste a little different (sunflower seed butter has its own distinct flavor) but they work the same way and are still totally paleo and kid-friendly. Just grab a brand with no added sugar or oils.

My mixture is too wet and won't hold a shape. What do I do?

The most common reason is that the apple wasn't squeezed dry enough. Go back and really wring it out in a towel. If it's still sticky, add almond flour one tablespoon at a time until you can roll it cleanly. Popping the whole bowl of mixture in the fridge for 10 to 15 minutes before rolling also helps a lot.

Are these Whole30 compliant?

Technically honey is not compliant on a strict Whole30, so if you're mid-round, just leave the honey out. The apple brings enough natural sweetness that most kids (and adults) honestly don't miss it. They're still delicious.

How long do these keep?

Up to 5 days in the fridge in a sealed container. You can also freeze them in a single layer, then transfer to a freezer bag. They'll keep for up to 2 months frozen and thaw in about 20 minutes at room temperature.

Can I add anything to these to make them more filling?

Yes. A tablespoon or two of collagen peptides blends right in and boosts the protein without changing the flavor or texture at all. That's actually how I usually make them for my own kids.

Cinnamon Apple Almond Butter Paleo Snack Bites

Chewy, naturally sweet snack bites packed with shredded apple, almond butter, and warm cinnamon, no baking required, totally paleo, and absolutely kid-approved.

  • Prep time:
  • Cook time:
  • Total time:
  • Servings: 16 bites

Ingredients

  • 1 cup finely shredded apple (about 1 medium apple, squeezed dry in a clean towel)
  • 1 cup almond flour
  • 1/2 cup smooth almond butter (no added sugar or oil)
  • 2 tablespoons raw honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons unsweetened shredded coconut (for rolling)

Instructions

  1. Peel and finely shred the apple using a box grater. Transfer it to a clean kitchen towel or several layers of paper towel and squeeze firmly to remove as much liquid as possible. You want the apple dry enough that it won't make the mixture soggy.
  2. In a large mixing bowl, combine the almond flour, ground cinnamon, nutmeg, and sea salt. Stir together until evenly mixed.
  3. Add the almond butter, raw honey, and vanilla extract to the dry ingredients. Mix well with a spatula or clean hands until everything starts to come together.
  4. Fold in the squeezed shredded apple. The mixture should be firm enough to roll into balls. If it feels too sticky, add almond flour one tablespoon at a time. If it feels too dry, add a tiny drizzle of honey.
  5. Spread the shredded coconut on a small plate.
  6. Scoop the mixture using a tablespoon or small cookie scoop and roll each portion between your palms into a smooth ball. Roll each bite in the shredded coconut to coat.
  7. Place finished bites on a parchment-lined plate or tray. Refrigerate for at least 30 minutes to firm up before serving.
  8. Store in an airtight container in the refrigerator for up to 5 days.
