Most chicken burgers are dry, bland, and honestly kind of sad. I spent a lot of years avoiding them and just defaulting to beef. Then I started playing around with the spice blend and fat content in the patty itself, and everything changed. These Grilled Chicken Avocado Burgers are juicy, smoky, a little spicy, and that chipotle lime mayo brings it all home. No bun needed. Not even a little bit. The butter lettuce wrap is actually the right move here, and once you try it you will get it. This is the kind of lunch I make when I want something that feels like real food, not rabbit food dressed up as a meal. It comes together in under 30 minutes, it is Whole30 compliant, and it will absolutely make you forget that grain-free eating is supposedly a sacrifice. Spoiler: it is not.

FAQs

Can I use ground turkey instead of ground chicken?

Yes, ground turkey works well here. Just make sure you are using a blend that includes some dark meat, not 100% breast, or the patties will dry out on the grill. The thigh-blend matters.

My chicken patties keep falling apart on the grill. What am I doing wrong?

A couple of things can cause this. First, make sure your grill or pan is fully preheated before the patties go on. Cold surface equals sticking and crumbling. Second, resist the urge to flip them too early. Let them cook until they naturally release from the grates, about 5 to 6 minutes. If they are sticking, they are not ready to flip yet. Also, do not overmix the meat mixture or you will break down the protein structure too much.

What brand of chipotle peppers in adobo is Whole30 compliant?

Read your labels carefully on this one. Many canned chipotle peppers contain added sugar. Look for brands with just peppers, tomatoes, vinegar, and spices in the ingredient list. Some specialty or natural grocery stores carry compliant versions. If you cannot find one, you can sub 1/2 teaspoon chipotle powder plus a tiny splash of apple cider vinegar for a similar smoky heat.

Can I make the patties ahead of time?

Absolutely. Shape the patties, layer them between sheets of parchment paper, and refrigerate for up to 24 hours before cooking. The chilled patties actually hold together a little better on the grill. You can also cook them fully and reheat in a skillet over medium heat for a few minutes per side.

What else can I serve with these besides lettuce wraps?

A big pile of sweet potato fries roasted in avocado oil is the obvious winner here. You could also serve them over a simple arugula salad with extra chipotle lime mayo drizzled on top, or alongside a quick cucumber and tomato salad with fresh lime and cilantro. The flavors are versatile enough that they go with just about anything fresh and bright.

  • Servings: 4 servings

Ingredients

  • 1 1/2 lbs ground chicken (preferably thigh-blend)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 3/4 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon coconut aminos
  • 1 tablespoon avocado oil, plus more for grill
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, very thinly sliced
  • 8 large butter lettuce leaves (for wrapping)
  • Fresh cilantro leaves, for serving
  • Lime wedges, for serving
  • 1/2 cup paleo mayonnaise (avocado-oil based)
  • 1 chipotle pepper in adobo, minced (check for compliant brand)
  • 1 teaspoon lime zest
  • 1 tablespoon fresh lime juice
  • 1 small garlic clove, grated
  • Pinch of sea salt

Instructions

  1. Make the chipotle lime mayo: In a small bowl, stir together the paleo mayo, minced chipotle pepper, lime zest, lime juice, grated garlic, and a pinch of sea salt until smooth and combined. Taste and adjust seasoning. Cover and refrigerate until ready to use.
  2. Make the chicken patties: In a large mixing bowl, combine the ground chicken, smoked paprika, garlic powder, onion powder, cumin, cayenne, sea salt, black pepper, coconut aminos, and avocado oil. Mix gently with your hands just until the spices are evenly incorporated. Do not overmix or the patties will get dense.
  3. Divide the mixture into 4 equal portions and shape each into a patty about 3/4 inch thick. Press a slight indent in the center of each patty with your thumb to help them cook flat.
  4. Heat a grill or grill pan over medium-high heat. Brush the grates or pan with a little avocado oil. Place the patties on the hot grill and cook for 5 to 6 minutes per side, or until the internal temperature reaches 165 degrees F and the outside has nice grill marks. Do not press down on the patties while cooking.
  5. While the patties rest for a couple of minutes, prep your toppings: fan out the avocado slices, set out the halved cherry tomatoes, and arrange the thin red onion slices.
  6. To assemble: Lay two butter lettuce leaves slightly overlapping to form a sturdy wrap. Spread a generous spoonful of chipotle lime mayo on the bottom leaf. Set a chicken patty on top, then layer with avocado slices, a few cherry tomatoes, and some red onion. Finish with fresh cilantro and a squeeze of lime. Fold the lettuce up around the burger and eat it like you mean it.
