Those fancy drive-through coffee drinks used to be my weakness. You know the ones. Loaded with syrup from a pump bottle full of ingredients I couldn't pronounce, fake flavoring, and enough refined sugar to spike your blood sugar into next Tuesday. And I would drink them and feel like garbage an hour later and wonder why I was so tired all the time. Once I cleaned up my diet and really started paying attention to what I was putting in my body, those drinks were one of the first things to go. Not because I had to be perfect, but because I genuinely stopped wanting to feel that crash. But I still wanted my cold, creamy, flavored iced coffee. I am not giving that up. So I built my own. This Iced Vanilla Hazelnut Paleo Coffee is my answer to every over-sweetened drive-through drink I ever loved and gave up. Cold brew for that smooth, low-acid coffee base. Full-fat coconut milk for the creaminess your soul is asking for. And a homemade hazelnut date syrup that honestly blew me away the first time I made it. Rich, nutty, a little caramel-sweet from the dates. No fake anything. Just real food doing what real food does. This one is going to be in regular rotation at your house. I promise.
Nutritional Benefits
Cold Brew Coffee
- Cold brew is lower in acidity than hot-brewed coffee, which is gentler on the gut lining and digestive system.
- Provides a steady source of caffeine without the harsh spike and crash many people experience from drip coffee.
- Rich in antioxidants that help fight oxidative stress in the body.
Full-Fat Coconut Milk
- Contains medium-chain triglycerides (MCTs), a type of fat the body converts to energy quickly rather than storing.
- Naturally dairy-free, making it a great option for anyone dealing with lactose intolerance or dairy sensitivity.
- The healthy fats in coconut milk help slow the absorption of natural sugars, keeping your energy more stable.
Medjool Dates
- A whole-food sweetener that brings natural sugar along with fiber, potassium, and magnesium.
- The fiber in dates helps moderate the glycemic impact compared to refined sugar or artificial syrups.
- Rich in antioxidants including flavonoids and carotenoids that support overall cellular health.
Raw Hazelnuts
- Packed with vitamin E, an important fat-soluble antioxidant that supports skin and immune health.
- A good source of heart-healthy monounsaturated fats and magnesium.
- Toasting them before blending brings out a deep, rich flavor that makes this syrup taste like something from a specialty café.
FAQs
Can I make this ahead of time?
The hazelnut date syrup keeps in the fridge for up to a week, so you can absolutely batch that ahead. The assembled drink is best served fresh over ice, but you can mix the cold brew, syrup, and coconut milk together (without ice) and keep it in a sealed jar in the fridge for up to 2 days. Just pour over ice when you're ready to drink it.
What if I don't have cold brew?
No problem. Strong brewed coffee that has been fully chilled in the fridge works great. Just brew it double strength so it doesn't taste watered down once you add the ice and coconut milk. You can also use espresso shots poured over ice if that is what you have.
Can I use a different nut?
Yes. Raw cashews or raw almonds work really well here if you don't have hazelnuts on hand. The flavor will be milder and more neutral, but the syrup will still be delicious. Toasting whatever nut you use is the step that makes the biggest flavor difference, so don't skip it.
Is this Whole30 compliant?
Technically, Whole30 does not allow recreating coffee shop-style drinks with sweeteners, even natural ones. The individual ingredients are all Whole30 compatible, but using a sweetened syrup in your coffee likely falls outside the spirit of the program. If you are in an active Whole30, just enjoy this recipe once your round is done. It will be waiting for you.
How do I make this an iced latte instead?
Pull two shots of espresso, let them cool for a few minutes, then pour over ice and follow the rest of the recipe as written. The espresso base gives you a slightly bolder, more intense coffee flavor that pairs beautifully with the hazelnut syrup.
My date syrup came out thick and chunky. What did I do wrong?
Most likely the dates just need more soaking time or a little more hot water. Let them sit in the hot water for a full 5 minutes before blending, and add water a tablespoon at a time if the blender is struggling. A high-powered blender like a Vitamix will get this completely smooth with no straining required. A regular blender will work fine, but straining through the sieve is more important in that case.
If you made this, I really want to hear how it went. Drop a comment below and let me know if you tried any variations with the syrup or swapped the nut. And if you've got a friend who still thinks paleo means giving up everything fun to drink, send this recipe their way. Because this right here is proof that real food doesn't have to be boring.
Iced Vanilla Hazelnut Paleo Coffee
A creamy, café-style iced coffee made with cold brew, homemade hazelnut syrup, vanilla, and coconut milk. Totally paleo, naturally sweetened, and better than anything you can get at the drive-through.
Ingredients
- 3/4 cup cold brew coffee (store-bought or homemade, unsweetened)
- 1/2 cup full-fat coconut milk (from a can, shaken well)
- 2 tablespoons hazelnut date syrup (see instructions)
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon fine sea salt
- 1 cup ice cubes
- --- FOR THE HAZELNUT DATE SYRUP ---
- 1/4 cup raw hazelnuts, toasted
- 4 Medjool dates, pitted
- 1/2 cup hot water
- 1/4 teaspoon pure vanilla extract
Instructions
- Make the hazelnut date syrup first. Toast the hazelnuts in a dry skillet over medium heat for 3 to 4 minutes, stirring often, until fragrant and lightly golden. Watch them closely, they go from perfect to burned fast.
- Transfer the toasted hazelnuts to a blender. Add the pitted dates, hot water, and vanilla extract. Let it sit for 2 minutes so the dates soften up.
- Blend on high for 60 to 90 seconds until completely smooth and syrupy. If the mixture is too thick to blend, add hot water one tablespoon at a time. Strain through a fine mesh sieve, pressing the solids with a spoon to get every last drop of syrup. Discard the solids. You will have more syrup than you need, store the rest in a sealed jar in the fridge for up to 1 week.
- Fill a tall glass with the ice cubes.
- Pour the cold brew coffee over the ice.
- Add 2 tablespoons of the hazelnut date syrup, the coconut milk, vanilla extract, and sea salt.
- Stir well until everything is combined and the syrup is fully dissolved into the coffee.
- Taste and adjust. Want it sweeter? Add another teaspoon of syrup. Want it creamier? Top it off with a splash more coconut milk.
- Serve immediately and drink it before the ice melts and waters it down.
