How do I keep guacamole from turning brown?
Lime juice is your best friend here, and I already have it in the recipe. If you're making this ahead, press plastic wrap directly onto the surface of the guacamole so no air can get to it, and refrigerate for up to 4 hours. Some browning on top is totally normal and safe, just stir it back in or scrape off a very thin layer. It's oxidation, not spoilage.
Can I make this less spicy?
Absolutely. Remove all the seeds and white membrane from the jalapeño before mincing, and reduce the chipotle powder to 1/2 teaspoon. You'll still get that smoky depth without the serious heat. For kids or heat-sensitive guests, the mango alone adds enough sweetness and brightness that it still tastes amazing.
Is this recipe Whole30 compliant?
Yes. Every single ingredient in this recipe is Whole30 compliant as written. Just make sure the plantain chips you serve with it don't have added sugar or non-compliant oils if Whole30 is your goal, or just go with cucumber rounds and jicama sticks and you're completely covered.
Can I use frozen mango?
You can, but let it thaw completely and then pat it dry before adding it to the guac. Frozen mango releases a lot of water as it thaws and you don't want a watery dip. Fresh is always better here if you can get it.
What can I serve this with besides chips?
Cucumber rounds are my personal favorite because they're cool and crisp against the smoky heat of the guac. Jicama sticks are great too, slightly sweet and super crunchy. Plantain chips are the most chip-like option and still paleo. You could also use romaine lettuce cups, endive leaves, or just eat it with a spoon. No judgment.
