The first time I tasted a real Caribbean dessert, not the tourist-resort version, but the kind made by someone who actually grew up with it, I understood immediately why tropical fruit belongs at the center of the plate, not just as a garnish. The fruit IS the dessert. Everything else just holds it up. That is exactly what this panna cotta does. A barely-sweet coconut base, silky and cool, with caramelized pineapple and mango piled on top, perfumed with allspice and a hit of dark rum. It tastes like warm island air and it sets up in your fridge without you hovering over it. Paleo, dairy-free, and honestly one of the most elegant things I make all year.

FAQs

Can I make this without rum?

Absolutely. The rum adds depth and that signature Caribbean warmth, but it is optional. Substitute 1/2 teaspoon of rum extract plus 1 tablespoon of fresh orange juice and you get a very similar flavor profile without any alcohol.

My panna cotta did not set firm. What happened?

Most likely one of two things: the gelatin did not fully dissolve (make sure you whisk it over gentle heat until there are zero granules), or you did not give it enough chill time. Four hours is the minimum. Overnight is better. Also check that your gelatin is fresh, old gelatin loses its setting power.

Can I use frozen mango and pineapple?

Yes, for the compote. Thaw them first and pat them dry before adding to the pan, excess water will steam them instead of caramelizing them. For the puree that goes into the panna cotta itself, frozen and thawed mango works perfectly.

Is this Whole30 compliant?

Not quite as written, because honey and rum are not Whole30 approved. To make it Whole30, skip the honey and rum entirely and rely on the natural sweetness of very ripe mango and pineapple. It is lighter in sweetness but still really good.

How far ahead can I make this?

The panna cotta base can be made up to two days ahead and stored covered in the refrigerator. Make the fruit compote fresh the day you serve it, it only takes about 10 minutes and the texture is much better fresh.

Can I unmold these onto a plate instead of serving in the glass?

Yes. Lightly grease the ramekins with coconut oil before pouring in the mixture. To unmold, run a thin knife around the edge, place a plate on top, and invert with confidence. If it sticks, set the bottom of the ramekin in warm water for 10 seconds and try again.
