Every Sunday my husband used to stop at a deli for a bagel with lox. The whole spread, the cream cheese schmear, the briny capers, the paper-thin red onion, the silky salmon. It is one of those meals that feels like a ritual more than just breakfast. When I cleaned up my eating, I was NOT willing to just walk away from that ritual. So I figured out how to keep every single element and ditch the parts that were actually wrecking us. The bagel gets replaced with a thick, baked egg round made with almond flour and tapioca. I know, stay with me. Seasoned generously with everything bagel spice and baked in a muffin tin, these rounds come out with a slight crust on the outside and a tender, sliceable interior. A lot of recipes go straight to cashew cream, which is great, but I wanted something that was faster, brighter, and honestly more interesting. Whipped avocado cream with full-fat coconut cream, lemon, and a touch of raw garlic blends into something so silky and rich it genuinely earns the schmear title. It has that cool, creamy, slightly tangy thing that cream cheese is supposed to bring. The rest, wild-caught lox, capers, red onion, fresh dill, those stay exactly as they are. As they should.

Re-warm them in a toaster oven at 325°F for about 5 minutes before slicing and loading them up. I would not recommend microwaving, they get a little rubbery.

Can I freeze the egg rounds?

Absolutely. Layer them between sheets of parchment paper in a freezer-safe bag and freeze for up to 2 months. Thaw overnight in the fridge, then toast to warm through. The whipped avocado cream does not freeze well, so make that fresh.

The avocado cream will brown, what do I do?

The lemon juice slows it down significantly, but avocado does what avocado does. Make the cream the same day you plan to serve it, press plastic wrap directly onto the surface if storing, and use it within about 8 hours for the best color. A quick stir before serving and it looks fine.

What smoked salmon should I buy?

Look for wild-caught Pacific or Alaskan sockeye or king salmon labeled 'lox-style' or 'cold-smoked.' Check the ingredient label, it should read salmon, salt, and maybe smoke. Nothing else. Avoid anything with added sugar, dyes, or preservatives. If your store has Vital Choice or a reputable fish counter, start there.

My egg rounds came out flat. What went wrong?

Most likely the muffin cups were overfilled or underfilled, or the oven was not fully preheated. Fill each cup about 2/3 full, no more. Also make sure your baking soda is fresh, old baking soda is a silent recipe killer. And let them cool in the tin before removing or they can collapse a bit as steam escapes.

Is this recipe Whole30?

Yes, with one check: make sure your smoked salmon has no added sugar in the ingredients. Most traditional lox-style salmon is fine, but some flavored varieties add sweeteners. Read the label and you are good to go.
