Honestly, I could eat four before I even get them in the fridge to set. (I'm not proud of this. I'm also not going to lie about it.) FAQs

Can I use a different nut instead of pecans?

Absolutely. Walnuts are the most similar and work beautifully. Almonds or cashews will also work, though the texture will be a little different. Cashews make the mixture extra creamy. Just toast whatever nut you use first because that step adds a depth of flavor you really do not want to skip.

My mixture is too sticky to roll. What do I do?

Chill it longer. Even 20 to 30 minutes in the refrigerator makes a big difference. If it is still too wet after chilling, add a small handful of shredded coconut to the food processor and pulse again. That will absorb the extra moisture and firm things up.

Are these Whole30 compliant?

Technically, Whole30 does not allow recreated desserts or treats even when made from compliant ingredients. All of the individual ingredients here are Whole30 compliant, but since these are intentionally sweet and dessert-like, they fall into the category Whole30 calls SWYPO (Sex With Your Pants On, basically eating things that mimic off-plan foods). If you are doing a strict Whole30, save these for after your round. They are absolutely worth it.

How long do these keep?

Up to 10 days in an airtight container in the refrigerator, and up to 2 months in the freezer. I usually freeze a dozen and keep four in the fridge so I always have something ready. Pull them from the freezer about 10 minutes before eating and they are perfect.

Can I add cacao or chocolate to these?

Yes and please do if that is your love language. You can add 2 tablespoons of raw cacao powder right into the food processor with the other ingredients for a chocolate-caramel version. You can also drizzle melted dairy-free dark chocolate over the finished balls before refrigerating. Both are incredible.

My dates seem dry and hard. Is that a problem?

Yes. Dry dates do not blend well and the texture of your bliss balls will suffer. Always look for plump, glossy Medjool dates. If yours are dry, soak them in warm water for 5 to 10 minutes, drain well, and pat them very dry before processing. That step will make them act like the sticky, caramel-rich ingredient they are supposed to be.
