You can, but I really do not recommend it for this recipe. Green and yellow plantains are starchy and not sweet, so your porridge will taste flat and kind of bland. The magic here is in a fully ripe plantain, one where the skin is mostly black. That is when they are soft, sweet, and practically beg to be mashed into something delicious.

Is this recipe Whole30 compliant?

Almost. The raw honey is the one thing that is not Whole30 approved. Just leave it out, and the ripe plantains are naturally sweet enough on their own. You can also add a tiny bit of pure monk fruit sweetener if you feel it needs it, though I find skipping sweetener entirely works great when the plantains are really ripe.

Can I make this ahead of time?

Yes. Store leftover porridge in an airtight container in the fridge for up to 3 days. When you reheat it, add a splash of coconut milk and warm it on the stovetop over low heat, stirring until creamy again. Keep the pecans separate and add them fresh so they stay crunchy.
