I look for grass-fed, pasture-raised collagen from a brand that third-party tests for heavy metals. There are several solid options out there. The most important thing is that it is unflavored for this recipe so it does not compete with the mango and banana. Flavored vanilla collagen can work too, just skip the vanilla extract if you go that route.
Can I make this the night before?
